How to make healthy carrot bread

I guess the autumn has started where you live as well? Over here it’s been rainy and cold all weekend, but that’s ok, because it gives me more time and inspiration for one of my hobbies. Baking to be more specific…

I love baking and even though I enjoy baking cupcakes, cakes and cookies, I have to admit that nothing compares to homemade bread. I love eating fresh and healthy bread, especially when it’s still warm and the butter melts on it.

Some types of bread are healthier than other and I have to tell you about my favourite type of bread, carrot bread! It’s healthy and it’s real tasty. Amazing! It’s simple to follow the recipe and I can assure you that the bread will be a lot tastier than the bread that can be bought in store. Give it a try!


Carrot bread


2 cups grated carrots
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons cinnamon
3 large eggs
2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup milk

3/4 cup chopped walnuts


Preheat the oven to 250 degrees. Prepare two loaf pans by greasing them or use parchment paper.

1. Grate the carrots and set aside.
2. Mix the dry ingredients together in a large bowl.
3. Whip the eggs together in a medium bowl. Stir the sugar in and then add the oil, extract, and milk.
4. Add the wet mixture to the dry ingredients and add the carrots and nuts. Mix until combined.
5. Divide the batter between the two loaf pans. Bake on the top shelf of the oven for 45 to 50 minutes or until the loaves are done (which can be seen if you stick a fork in the middle of the loaves). Remove the loaves from the pans and cool on wire racks.
